Easy Salsa

Amount Measure Ingredient -- Preparation Method

14 1/2 ounces canned whole peeled tomatoes -- undrained

4 ounces canned chopped green chilies -- undrained

1/2 cup sliced scallions

(white and green parts)

1/2 cup chopped onions

1/4 cup chopped fresh cilantro

2 tablespoons fresh Lime juice

2 cloves garlic -- minced

1/4 teaspoon ground cumin

1/4 teaspoon sugar

1/4 teaspoon salt -- or to taste

1/2 cup chopped fresh tomatoes

 

Vegan. Low fat

 

Makes 2 2/3 cups; serves 12 to 16

 

Not quite as easy, but even better, is to start with 2 cups finely chopped

fresh tomatoes instead of the canned.

 

1. Place all the ingredients except the chopped tomatoes in a blender or

food processor container fitted with a steel blade. Cover and process

until finely chopped.

 

2. Transfer to a bowl and stir in the chopped tomatoes. Let stand at

least one hour for the flavors to meld.

 

Variation: Omit the canned chopped chilies and substitute 1 to 2 seeded

fresh jalapeño peppers.
