1,000 Vegetarian Recipes: Guacamole

In the introduction to 1,000 Vegetarian Recipes, author Carol Gelles makes

menu suggestions for a wide variety of ethnic meals. I attempted to format

most of the Mexican dishes that she suggests, and, along the way, formatted

some other recipes too.

 

Here is the first of some Mexican appetizers.

Guacamole

Amount Measure Ingredient -- Preparation Method

1 cup avocado pulp

(1 small to medium avocado)

2 tablespoons fresh lime juice

2 tablespoons chopped scallions

(white and green parts)

1 tablespoon sour cream

2 cloves garlic -- minced

1/2 fresh or marinated jalapeño pepper

seeded and minced

 

Vegan

 

Makes: 1 cup; serves: 2 to 4

 

This is a very basic recipe. I usually prepare it with all the variations

when serving it as a dip. When using it as an ingredient for other Mexican

dishes such as Burritos, I use the plain recipe. People like to eat lots

of guacamole, so you may want to double the recipe. I prefer to use Haas

avocados, but if they aren't available any avocado will do.

 

1. In a medium bowl, mash the avocado with a fork until smooth or slightly

chunky (as you prefer). Add the remaining ingredients.

 

Variation: Add 1/2 cup chopped seeded tomatoes and/or 2 to 4 tablespoons

chopped fresh cilantro.
