Raspberry Ketchup

2 cups raspberries

1/2 cup chopped peeled apple

1/2 cup chopped red onions

1/3 cup sugar

1/4 cup water

3 tablespoons white vinegar

1 small clove garlic -- minced

1/2 teaspoon salt

 

Place all the ingredients in a 2-quart saucepan. Bring to a boil over medium

heat. Reduce heat to low and simmer, uncovered, 40 minutes.

 

Place in a food processor container fitted with a steel blade. Cover and

process until smooth. Pour the puree through a sieve to remove the seeds.

 

VARIATION: Strawberry Ketchup: Use sliced strawberries instead of the

raspberries. Don't bother to sieve the ketchup.
