I have never received so much junk e-mail, mostly get-rich-quick type schemes as

I have since became . I used to get one once in a while, but

now I get at least a few of them everyday! I'll have to see if changing my

preferences helps.

 

Christine, here are a couple of seitan recipes for you. Even my persnickity

carnivore husband like the Seitan with Lemon and Garlic. I haven't tried the

Curried Seitan because we normally don't care for spicy things, but maybe I will

sometime soon. I have never tried to send more than one recipe at a time

before, so I hope this works. (I still have Karen's note tellling me how to do

this, which I have referred to - but that doesn't necessarily mean I'll be

successful ;-) If it doesn't work, I'll send them one at a time.

Curried Seitan

Amount Measure Ingredient -- Preparation Method

1 tub seitan -- drained and chopped

1 small onion -- chopped fine

1 clove garlic -- minced

3 tablespoons vegetable oil

3 tablespoons whole grain wheat flour

1/2 teaspoon salt -- or to taste

1/4 teaspoon paprika

2 teaspoons curry powder -- or to taste

2 cups soy milk -- warmed

 

Drain the seitan, reserving broth for another use if desired. Chop the seitan

into bite sized pieces, either by hand or pulse in a food processor.

 

Heat the oil in a skillet or saucepan. Saute the onion until lightly browned.

Add the flour, stirring to make a roux. Add the seasonings and stir in. When

the roux is lightly toasted and fragrant, begin slowly adding the soy milk,

blending with a whisk, until all of it is incorporated.

 

Add the seitan, stir and continue simmering gently. Stir frequently, cooking

until the sauce is thickened and the seitan is heated through.

Seitan with Garlic and Lemon

Amount Measure Ingredient -- Preparation Method

1 tub seitan -- drained and chopped

2 teaspoons olive oil

5 cloves garlic -- minced, or more to taste

juice of 1 lemon

salt and pepper -- to taste

 

Drain the seitan, reserving broth for another use if desired. Chop into bite

sized pieces or flake it in a food processor. Set aside.

 

Mince garlic and juice the lemon. Set aside.

 

Heat olive oil in a skillet or wok. Saute the garlic until it is beginning to

turn a light golden color. Add the seitan and saute until it begins to brown.

Add the lemon juice and stir. Add salt and pepper to taste.

NOTES : Variations: Other things that can be added to this are a couple of

finely chopped scallions, a tablespoon or two of chopped fresh flat leaf

parsley, or a teaspoon of dried mint.
