Guest guest Posted February 25, 2001 Report Share Posted February 25, 2001 * Exported from MasterCook * Tequila Fajitas Recipe By :More Soy Cooking, Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : More Soy Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups TVP Chiken Strips 1 1/2 cups vegetarian chicken-flavor broth -- boiling 2 teaspoons olive oil 1/4 teaspoon crushed red pepper 1/2 10 oz package Soyrizo -- (vegetarian chorizo) 5 cloves garlic -- minced 1 large yellow onion -- halved crosswise & cut into 1/8 " wedges 1 green bell pepper -- cut into 2 " strips 1 yellow bell pepper -- cut into 2 " strips 2 cups sliced carrots 3 cups unpeeled red-skinned potatoes -- cut into 1/4 " wedges 1 medium zucchini -- sliced lengthwise & then crosswise 1/3 cup tequila 1/2 cup vegetarian chicken-flavor broth -- boiling 1/2 cup chopped fresh cilantro 8 whole wheat tortillas Place TVP in a medium-size bowl, add 1 1/2 cups boiling broth, stir thoroughly, and set aside. Heat oil and crushed pepper in a large electric frying pan or Dutch oven over medium-high heat for 2 minutes. Remove casing from the Soyrizo and crumble into pan. Saute 3 minutes or until browned, stirring frequently. Add garlic, onion, and bell peppers and saute 3 minutes. Add carrots and potatoes and cook mixture 10 minutes, stirring frequently. Add zucchini, tequila, 1/2 cup of boiling broth, and cilantro. Reduce heat to low and simmer mixture, stirring occasionally, 10 minutes or until potatoes are cooked through. Warm tortillas covered in cover, microwave, or tortilla warmer. Serve with your favorite salsa, sliced tomatoes, and guacamole.
