Guest guest Posted February 25, 2001 Report Share Posted February 25, 2001 * Exported from MasterCook * Chipotle " Chicken " Salad Recipe By :More Soy Cooking, Marie Oser Serving Size : 10 Preparation Time :0:00 Categories : More Soy Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 7 oz packages Vegi-Deli " Chicken " Strips 1 stalk celery -- chopped 1/4 cup Vegi-Deli " Pepperoni " -- diced 1/3 cup chopped onion 1/2 cup dried cranberries 1 medium Granny Smith apple -- peeled & diced 1/2 cup chopped fresh cilantro 1 12.3 oz package lite silken tofu 2 cloves garlic -- peeled 1/4 cup Chipotle Gourmayo eggless mayonnaise 1 teaspoon Bragg's Liquid Aminos 1 teaspoon lemon juice 1/4 cup nutritional yeast 1/3 cup sliced almonds -- (to 1/2 cup) optional Combine the " chicken " strips with the celery, " pepperoni " , onion, cranberries, apple, and cilantro in a medium bowl and set aside. Place the tofu in a food processor and blend; add garlic and process. Add the eggless mayonnaise, liquid aminos, lemon juice, and yeast, and process until smooth. Combine the tofu dressing with the " chicken " strips mixture and mix thoroughly. Top with sliced almonds, if desired, cover, and refrigerate for at least an hour. Serve well chilled.
