Guest guest Posted February 24, 2001 Report Share Posted February 24, 2001 * Exported from MasterCook * Southwestern Bean Dip Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 144 Serving Size : 8 Preparation Time :0:00 Categories : Appetizers And Snacks Mirkin's 20/30 Fat & Fiber Beans And Legumes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 oz frozen bell pepper-onion mix 1/4 cup bouillon 15 ounces canned kidney beans -- drained 1 lime -- Juice of 2 tablespoons chopped fresh cilantro leaves 1 teaspoon mild chili powder 1 pinch cayenne pepper -- or to taste Sliced raw sweet potato OR other veggie dippers of your choice Bring the onion-bell pepper mix and the bouillon to a boil in a large saucepan. Reduce heat and simmer until soft, about 5 minutes. Combine with the remaining ingredients, except dippers, in a blender or food processor and puree until smooth. Serve with raw veggies.
