Southwestern Bean Dip

Beans And Legumes Vegetables

 

Amount Measure Ingredient -- Preparation Method

5 oz frozen bell pepper-onion mix

1/4 cup bouillon

15 ounces canned kidney beans -- drained

1 lime -- Juice of

2 tablespoons chopped fresh cilantro leaves

1 teaspoon mild chili powder

1 pinch cayenne pepper -- or to taste

Sliced raw sweet potato

OR other veggie dippers of your choice

 

Bring the onion-bell pepper mix and the bouillon to a boil in a large

saucepan. Reduce heat and simmer until soft, about 5 minutes. Combine

with the remaining ingredients, except dippers, in a blender or food

processor and puree until smooth. Serve with raw veggies.

 

Yield: about 2 cups, per 1/4 cup: calories: 53, fat: 0g, fiber: 3g.
