Chili Cheddar Souffle with Avocado Corn Relish

Souffle

1/4 cup butter

1/4 cup flour

1 1/2 cups 2% low-fat milk

6 ounces sharp cheddar cheese -- grated

1 4-ounce can diced green chiles

1 large clove garlic -- minced

3/4 teaspoon salt

5 large egg yolks

6 large egg whites

1/4 teaspoon cream of tartar

Avocado Corn Relish

12 ounces plum tomatoes -- seeded and chopped

1 large avocado -- diced

3/4 cup corn kernels

1/3 cup chopped red onion

3 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice

1/8 to 1/4 tsp dried crushed red pepper

 

For the relish, combine all ingredients in a medium bowl; stir gently to blend.

Season to taste with salt and pepper. Cover and refrigerate up to 3 hours.

Yield: 3 1/2 cups

 

For the souffle, position the oven rack in the center of the oven and preheat to

375 degrees. Butter one 8 to 10 cup souffle dish; dust with flour. Melt 1/4

cup butter in a heavy medium saucepan over medium high heat. Add 1/4 cup flour

and whisk until the roux is smooth and bubbles, about 2 minutes. Gradually

whisk in milk and bring to a boil. continue boiling the mixture until smooth

and thick, whisking constantly, about 1 minute. Remove the pan from the heat.

Add the cheese, chiles, garlic and salt; stir until the cheese melts. Season

with pepper. Whisk the yolks into the souffle base.

 

Beat the egg whites and cream of tartar in a large bowl until stiff but not dry.

Fold 1/4 of the whites into the souffle base to lighten. Gradually fold the

souffle base back into the remaining whites. Transfer the mixture into the

prepared dish.

 

Bake until puffed, brown and almost firmn to the touch in the center, about 38

minutes. Serve immediately with the avocado corn relish.
