Kale and Potato Soup

1 1/2 teaspoons olive oil -- plus

1 1/2 teaspoons olive oil -- divided

1 11.2-ounce package Lean Links Italian -- cut to 1/2-inch slices

7 cloves garlic -- minced

2 medium leeks -- cleaned and sliced

1/2 cup chopped green pepper

1 pound peeled diced potatoes (4 cups)

1 pound chopped tomatoes (1 1/2 cups)

8 cups torn kale leaves -- 1 head

7 cups chicken-flavor vegetarian broth -- boiling

1/4 cup nutritional yeast

1 6-ounce can tomato paste

1/3 cup mellow barley miso

1/2 cup dry sherry

1 teaspoon ground sage

1 teaspoon dried marjoram

1 teaspoon dried thyme

 

1. Warm 1 1/2 teaspoons of oil in a 5-quart saucepan over medium-high heat for 1

minute. saute the sliced veggie sausage 5 minutes, stirring frequently. Remove

browned veg-sausage and add the remaining 1 1/2 teaspoons of oil. Add the

garlic, leeks, and green pepper and saute 3 minutes. Add the potatoes and cook

mixture 3 minutes, stirring frequently. Add the tomatoes and kale; cook mixture

5 minutes or until kale is limp, then add the hot broth, the cooked sausage, and

the nutritional yeast. Reduce heat to medium low and cook 5 minutes. Add the

tomato paste, stirring to blend. Simmer the soup 15 minutes.

 

2. In a small bowl, cream the miso with the sherry and stir into the soup with

the sage, marjoram, and thyme. Simmer soup 5 minutes, or until ready to serve.

Do not boil.
