Guest guest Posted February 23, 2001 Report Share Posted February 23, 2001 * Exported from MasterCook * Italian Wedding Soup Recipe By :Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil cooking spray 1 14-ounce package Gimme Lean ground beef style 6 cloves garlic -- minced 1 large yellow onion -- chopped 1 stalk celery -- with leaves, chopped 4 cups sliced baby cut carrots 6 cups chicken-flavor vegetarian broth 3 ounces hickory or savory baked tofu (half-package) 1/3 cup diced Vegi-Deli pepperoni 2 14.5-ounce cans Italian-style stewed tomatoes 6 ounces fresh baby spinach 1/2 cup mellow white miso 1/4 dry vermouth 1 teaspoon dried thyme 1 teaspoon dried basil 1. Preheat oven to 400F. Spray a baking pan with oil. 2. Roll the Gimme Lean into about 40 small balls and place them the prepared pan. Lightly spray tops with oil. Bake for 5 minutes, then place under broiler until tops are lightly browned. Set aside. 3. In a 6-quart saucepan combine the garlic, onion, celery, and carrots with the broth and bring the mixture to a boil. Reduce heat to medium and simmer, stirring occasionally. Slice the tofu on an angle and add to the soup with the diced veggie pepperoni. 4. Place the stewed tomatoes in a food processor and pulse just until chunky. Add to the soup along with the balls. Cook for 5 minutes, stirring occasionally. Add the spinach and simmer 15 minutes. 5. Place the miso in a small bowl and blend with the vermouth. Stir into the soup, and add the thyme and basil. Simmer 5 minutes or just until the soup begins to bubble. Do not boil.
