Guest guest Posted February 23, 2001 Report Share Posted February 23, 2001 * Exported from MasterCook * Noodles Romanoff Recipe By :Cooking Light Cookbook 1991 Serving Size : 6 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vegetable cooking spray 1 1/2 cups sliced fresh mushrooms 2 cloves garlic -- minced 2 cups cooked medium egg noodles -- (cooked without salt or fat) 1/2 cup low-fat sour cream 2 tablespoons chopped green onions 2 tablespoons chopped fresh parsley 1/4 teaspoon salt 1/4 teaspoon pepper 2 tablespoons grated Parmesan cheese Coat a large nonstick skillet with vegetable cooking spray; place skillet over medium-high heat until hot. Add sliced mushrooms and minced garlic; sauté 3 minutes or until mushrooms are tender. Add noodles, sour cream, chopped green onions, chopped fresh parsley, salt, and pepper to skillet, stirring gently. Transfer noodle mixture to a 1-quart casserole coated with cooking spray. Top with Parmesan cheese. Bake, covered, at 350° for 20 minutes; uncover and bake an additional 5 minutes or until cheese is lightly browned. (110 calories per 1/2-cup serving).
