Guest guest Posted February 23, 2001 Report Share Posted February 23, 2001 * Exported from MasterCook * Orzo Milanese Recipe By :Cooking Light Cookbook 1991 Serving Size : 8 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vegetable cooking spray 2 teaspoons reduced-calorie margarine 1 1/2 cups chopped onion 1/2 cup chopped green pepper 1/2 cup chopped celery 1 (10 1/2-ounce) can low-sodium broth -- undiluted 1 cup orzo Dash of powdered saffron 1/4 teaspoon salt 1/8 teaspoon pepper 3 tablespoons freshly grated Parmesan cheese Coat a 1 1/2-quart ceramic heatproof dish with cooking spray; add margarine. Place over low heat until margarine melts. Add onion, green pepper, and celery; sauté until tender. Add broth; bring to a boil. Ad orzo, saffron, salt, and pepper; stir well. Cover and bake at 350° for 25 minutes or until liquid is absorbed. Sprinkle with Parmesan cheese, and serve immediately. (125 calories per 1/2-cup serving).
