Fried Rice and Pasta

Vegetable cooking spray

1/4 cup thinly sliced celery

1/4 cup thinly sliced green onions

1 tablespoon reduced-calorie margarine

1/2 cup long-grain rice -- uncooked

2 ounces vermicelli -- uncooked and broken into 1/2 " pieces

2 cups hot water

1 tablespoon chopped fresh parsley

1/2 teaspoon bouillon granules

1/4 teaspoon salt

1/4 teaspoon garlic powder

 

Coat a large nonstick skillet with cooking spray; place over medium-high heat

until hot. Add celery and onions; sauté until tender.

Transfer to a serving bowl, and set aside.

 

Coat skillet with cooking spray, add margarine, and place over medium heat until

margarine melts. Stir in rice and vermicelli; cook

over medium heat until vermicelli is lightly browned, stirring frequently. Add

water, sautéed celery and onions, and remaining

ingredients to rice mixture. Cover, reduce heat, and simmer 15 to 20 minutes or

until rice is tender and liquid is absorbed. Stir

before serving. (91 calories per 1/2-cup serving).
