Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 * Exported from MasterCook * Green Beans Italian Recipe By :Marie Oser Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 teaspoons olive oil 3 cloves garlic -- minced 1/2 medium red bell pepper -- chopped 1 stalk leafy rib celery -- sliced 1 pound fresh green beans -- 2-inch pieces 6 ounces portobello mushroom -- diced 1/2 cup dry vermouth 1 14.5-oz can Italian-style stewed tomatoes 10 each fresh basil leaves -- chopped 1 bay leaf 1/4 cup beef-flavored vegetarian broth -- boiling 1/3 cup nutritional yeast 1 teaspoon dried thyme 1 teaspoon dried oregano 2 tablespoons soy Parmesan cheese In a medium saucepan, warm oil over medium-high heat and saute the garlic, bell pepper and celery 3 minutes. Add green beans and cook 5 minutes or until the beans are crisp-tender, stirring occasionally. Add the mushrooms and cook 3 minutes; add vermouth and cook 2 minutes longer. Reduce heat to medium low and add the remaining ingredients. Simmer, stirring occasionally, 5 minutes or until ready to serve.
