Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 * Exported from MasterCook * " Pepperoni " Roll-Ups Recipe By :More Soy Cooking, Marie Oser Serving Size : 24 Preparation Time :0:00 Categories : More Soy Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil cooking spray 1 12.3 oz package lite silken tofu 3 tablespoons eggless mayonnaise 1 17 gram package Tofu Hero Eggless Egg Salad 2 cups whole wheat pastry flour 1/2 teaspoon sea salt 2 teaspoons egg replacer powder 2 teaspoons nonaluminum baking powder 3 tablespoons Lighter-Bake 2 tablespoons olive oil 1 tablespoon liquid Fruitsource 1/2 cup enriched 1% fat soy milk 3 tablespoons Dijon mustard -- (to 4 tbsp) 7 1/2 ounces vegetarian pepperoni -- sliced thin 1/4 cup soy Parmesan cheese paprika Preheat oven to 400ºF. Spray baking pan with olive oil cooking spray. In a medium bowl, mash tofu with a potato masher. Add eggless mayonnaise and Tofu Hero, mix thoroughly, and set aside. Place the flour, salt, egg replacer powder, and baking powder in a food processor and pulse to mix. Add Lighter Bake; pulse to mix. Add oil and Fruitsource; blend. While motor is running, pour in soy milk. Mixture will form a dough ball. Turn dough onto lightly floured surface; pat into a ball, and divide in two. Cover one half and shape the remaining dough into a log. Sprinkle with flour and roll out dough into a rectangular shape about 1/4-inch thick. Spread the dough with mustard and place a layer of " pepperoni " slices across the half of the surface closest to you. Top with tofu mixture and sprinkle with soy cheese. Roll the dough away from you, tucking in the short ends as you go. Place the roll-up seam side down on a prepared baking pan and repeat with remaining ingredients. Sprinkle the rolls with paprika and bake for 25 minutes or until golden brown. Cool slightly and slice into 1-inch pieces. You may also wrap in foil and refrigerate until ready to serve warm or cold. Reheat, wrapped in foil, at 325ºF for 15 minutes or until warm.
