Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 * Exported from MasterCook * Cauliflower with Sun-Dried Tomatoes Recipe By :Marie Oser Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 ounces sun-dried tomato halves -- chopped 1 1/3 cups boiling water 2 teaspoons olive oil 1 tablespoon dried garlic flakes 1/2 cup chopped red bell pepper 1 medium leek -- cleaned and sliced vertically 3 ounces portobello mushrooms -- diced 1 medium head cauliflower -- cut into florets 1/3 cup mirin wine 1 tablespoon tamari soy sauce 3 tablespoons nutritional yeast 1 1/2 teaspoons dried thyme Combine sun-dried tomatoes and boiling water in a medium bowl. Set aside. Warm oil and garlic in a large saucepan over medium high heat for 1 minute. Add the bell pepper, leek and carrots and cook 5 minutes, stirring frequently. Add mushrooms, cauliflower and sundried tomatoes with the soaking liquid. Cook 5 minutes; then add remaining ingredients. Lower heat and simmer 5 minutes, stirring occasionally.
