Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 * Exported from MasterCook * Butternut Squash Bake Recipe By :Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1/8 teaspoon crushed red pepper 6 large garlic cloves -- minced 1 medium shallot -- minced 1 yellow onion -- chopped 1/3 cup chopped green bell pepper 1 medium butternut squash -- cubed (5 cups) 2 cups sliced carrots 1/2 cup chicken-flavored vegetarian broth -- boiling 1 14.5-oz can Mexican-style stewed tomatoes 1 teaspoon dried basil 1 tablespoon tamari soy sauce Preheat oven to 350F. In a 5-quart stove top and oven safe baking dish, warm oil and crushed pepper for 1 minutes over medium-high heat. Add garlic, shallot, onion and bell pepper. Saute 3 minutes. Add squash and carrots and cook 8 minutes, stirring frequently. Add broth and tomatoes and reduce heat to medium low. Add remaining ingredients and simmer 5 minutes, stirring occasionally. Cover and bake for 15 minutes.
