Pineapple " Upside-Down Cake " Pudding

Amount Measure Ingredient -- Preparation Method

1/2 cup packed brown sugar

1/4 cup water

16 ounces pineapple chunks

drained and juice reserved

1 cup fat-free vanilla yogurt

3 cups cooked oat groats

 

In a small saucepan, bring the brown sugar and water to a boil and cook

over medium heat 5 minutes or until the sugar is golden brown but not

burned. Slowly stir in 1/2 cup of the pineapple and cook, stirring, until

smooth.

 

Stir the yogurt into the oat groats and divide it into 6 glass dessert dishes.

 

Spoon pineapple mixture over oat mixture. Refrigerate until chilled, if

desired.

 

Yield: 6 servings, calories: 211, fat: 2g, fiber: 3g.
