Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 * Exported from MasterCook * Pineapple " Upside-Down Cake " Pudding Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 148 Serving Size : 6 Preparation Time :0:00 Categories : Desserts Grains And Cereals Mirkin's 20/30 Fat & Fiber Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup packed brown sugar 1/4 cup water 16 ounces pineapple chunks drained and juice reserved 1 cup fat-free vanilla yogurt 3 cups cooked oat groats In a small saucepan, bring the brown sugar and water to a boil and cook over medium heat 5 minutes or until the sugar is golden brown but not burned. Slowly stir in 1/2 cup of the pineapple and cook, stirring, until smooth. Stir the yogurt into the oat groats and divide it into 6 glass dessert dishes. Spoon pineapple mixture over oat mixture.
