Mexican Slaw

Amount Measure Ingredient -- Preparation Method

1 small head green cabbage -- cored

and shredded

2 cups frozen whole-kernel corn

1 small red onion -- chopped

1 red bell pepper -- chopped

1/4 cup chopped fresh flat-leaf parsley

***DRESSING***

1/4 cup vinegar

1/4 cup fat-free mayonnaise

1 tablespoon Dijon mayonnaise

1 teaspoon ground cumin

 

Combine cabbage, corn, onion, bell pepper and parsley in a serving bowl.

 

Prepare the Dressing: Combine all the dressing ingredients in a small

bowl. Pour dressing over the slaw and toss to combine.

 

Yield: 4 to 6 servings, calories: 132, fat: 1g, fiber: 8g.
