Cuban Sweet Potato Salad

4 medium sweet potatoes

cut into bite-size pieces

1 bunch green onions -- sliced

1/2 cup pimiento-stuffed olives -- sliced

1/4 cup fat-free mayo or plain fat-free yogurt -- About

1 tablespoon fresh lime juice

1 teaspoon ground cumin

1/2 teaspoon hot pepper sauce -- or to taste

 

Steam the sweet potatoes over boiling water until just tender, about 15

minutes. Transfer sweet potatoes to a serving bowl and cool to room

temperature or chill. Add the remaining ingredients and toss gently to

combine. Add the remaining ingredients and mix to combine.

 

Yield: 4 to 6 servings, calories: 180, fat: 1g, fiber: 12g.
