Tofu Mascarpone

1 12.3 oz package extra-firm silken tofu

1/2 cup raw cashew pieces -- very finely ground

plus

2 tablespoons raw cashew pieces -- very finely ground

6 teaspoons fresh lemon juice

pinch salt

 

Process all of the ingredients in a food processor or blender at high speed for

several minutes. Be patient; it has to be very smooth. You may have to stop

the machine a couple of times and scrape down the sides. When the mixture is as

smooth as possiblle, scoop into a covered container, and refrigerate for up to 1

week. It will firm up considerably.
