Guest guest Posted February 21, 2001 Report Share Posted February 21, 2001 * Exported from MasterCook * Garbanzo Bean Roast with Sherry Sauce Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound canned garbanzo beans -- drained 1 teaspoon yeast extract 1 1/4 cups chopped walnuts 1 1/4 cups fresh white bread crumbs 1 onion -- finely chopped 3 1/2 ounces sliced mushrooms -- sliced 1 3/4 ounces canned corn -- drained 2 cloves garlic -- crushed 2 tablespoons dry sherry 2 tablespoons vegetable stock 1 tablespoon chopped cilantro 8 ounces prepared puff pastry 1 egg substitute equivalent -- beaten, or ¼ cup brown rice syrup 2 tablespoons soy milk salt and pepper SAUCE: 1 tablespoon vegetable oil 1 leek -- thinly sliced 4 tablespoons dry sherry 2/3 cup vegetable stock In a food processor, combine bread crumbs, garbanzo beans, yeast extract, and nuts. Blend for 30 seconds. Sauté onions and mushrooms in a large skillet on low heat. This will extract the juices. Add the garbanzo bean mixture to the skillet. Add the corn and garlic. Stir in the sherry, vegetable stock, cilantro, and seasoning. Bind this mixture together. Remove the skillet from heat and allow to thoroughly cool. Roll the puff pastry onto a lightly floured board to form a 14-inch x 12-inch rectangle. Shape the garbanzo bean mixture into a loaf shape and wrap the puff pastry around it. Seal the edges. Place on a dampened cookie sheet, seamed-side down. Score the top of the loaf in a criss-cross pattern. Mix the milk and egg together. Brush over the pastry. Cook in a 350 degree preheated oven for 25-30 minutes, or until loaf rises and turns golden brown. Heat the oil for the sauce in a pan. Sauté the leek for five minutes, stirring constantly. Add all of the remaining ingredients and bring to a full boil. Lower heat and simmer for five minutes. Serve as a delicious accompaniment to the roast.
