Kathleen * Exported from MasterCook * Picadillo (Cuban Hash) Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 126 Serving Size : 8 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Beans And Legumes Fruits Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped 1 green bell pepper -- chopped 28 ounces canned Italian plum tomatoes -- undrained, broken up 2 teaspoons bouillon granules 15 ounces canned black beans -- drained 1 cup crumbled soy or other vegetable burger 1/2 cup pimiento-stuffed green olives -- sliced 1/2 cup golden raisins 1 tablespoon mild chili powder 2 teaspoons Dessert Spice Blend (see separate recipe) Generous pinch of cayenne pepper -- or to taste 2 tablespoons red wine vinegar 2 cups cooked barley OR other whole grains of your choice Combine the onion, bell pepper, tomatoes and bouillon granules in a large pot. Bring to a boil, reduce heat and simmer 5 to 10 minutes. Stir in the remaining ingredients. Bring to a boil, reduce heat and simmer 15 to 20 minutes. Serve over whole grains. Variations: Instead of the raisins, add other fruits such as chopped apples, pineapple or bananas. Or add chunks of sweet potato or winter squash (precook briefly in the microwave oven). This is also delicious served over baked sweet potatoes instead of whole grains.
