Mango Salad With Barley And Beans

Amount Measure Ingredient -- Preparation Method

1 small red onion -- chopped

2 mangoes -- peeled

pitted and chopped

15 ounces canned black beans -- drained and rinsed

2 cups cooked barley -- chilled

1/2 cup chopped fresh cilantro

OR fresh flat-leaf parsley

1/2 cup grapefruit juice

1 teaspoon ground cumin

1 jalapeno chilies -- (to taste), up to 2

seeded and chopped

 

Combine all ingredients in a serving bowl.

 

Yield: 4 to 6 servings, calories: 184, fat: 2g, fiber: 9g.
