Guest guest Posted February 21, 2001 Report Share Posted February 21, 2001 * Exported from MasterCook * Favorite Artichoke Dip Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 143 Serving Size : 1 Preparation Time :0:00 Categories : Appetizers And Snacks Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound fresh spinach large stems removed OR 10-oz. frozen spinach thawed 2 garlic cloves -- minced 15 ounces canned white beans -- drained 1 bunch green onions -- sliced 1 pinch cayenne pepper OR 1/2 teaspoon hot pepper sauce -- or to taste 2 tablespoons fresh lemon juice 16 ounces canned artichoke hearts drained and finely chopped Red bell pepper rings for garnish -- (optional) Serve with toasted pita wedges or sliced raw sweet potatoes. Wash the spinach and place it in a pot and cook over high heat until just wilted, about 2 minutes. Drain. Place the spinach and remaining ingredients, except the artichokes and garnish, in a blender or food processor and puree until smooth. Transfer the puree into a serving bowl and stir in the chopped artichoke hearts.
