Guest guest Posted February 21, 2001 Report Share Posted February 21, 2001 * Exported from MasterCook * Tofu-Fruit Yogurt Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups fresh or frozen berries, or other chunked fruit 1 12.3 oz box firm or extra-firm silken tofu -- crumbled 2 1/4 teaspoons vanilla 2 tablespoons fresh lemon juice pinch salt 1 teaspoon nondairy acidophilus powder (optional) unbleached sugar or grade A light maple syrup to taste Chop the berries or fruit in a blender or food processor. Add the crumbled tofu and continue blending. Add the vanilla, lemon juice, and salt. The resulting consistency should be similar to that of yogurt. Stir in the acidophilus powder if you want the benefits of this active culture, then chill the mixture until it firms up. Sweeten each serving to taste with unbleached sugar or grade A light maple syrup.
