Guest guest Posted February 21, 2001 Report Share Posted February 21, 2001 * Exported from MasterCook Mac * Cauliflower Quiche w/ Potato Crust Recipe By : Randy's Vegetarian Cookbook Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- POTATO CRUST 2 cups packed grated potato -- raw 1/2 teaspoon salt 1 egg -- beaten (optional) 1/4 cup onion -- minced FILLING 1 cup onion -- chopped 1 clove garlic -- minced 3 tablespoons butter 1 cauliflower medium -- cut into florets dash thyme 1/2 teaspoon basil 1/2 teaspoon salt 2 egg -- beaten 1/4 cup milk 1 cup cheddar cheese -- grated paprika Prepare The Crust (or you can use a store bought pie crust, but it won't be as wonderful): Squeeze liquid out of the grated potato and then mix with other crust ingredients. Pat mixture into a well oiled 9 inch pie pan, building up the sides of the crust. Bake for 30 minutes @ 400F then brush the crust with a little oil to crispen it. Bake an additional 10 to 15 minutes or until golden. Filling: Saute onions and garlic in butter for 5 minutes. Add cauliflower, herbs, salt & pepper to taste and cover. Cook for about 10 minutes stirring occasionally. Beat the eggs and milk together and combine with cheese and cauliflower mixture. Pour into the crust and dust with paprika.
