From the recipes they submitted for this book, it's apparent that Mexican and Tex-Mex foods are real favorites with Reversal Diet participants. Fortunately, it's easy to adapt these foods to Reversal Diet guidelines thanks to relatively new nonfat products like baked tortilla chips, flour tortillas, vegetarian refried beans, and cheese. This menu puts some of those items to use in a quick and healthful Mexican meal that would otherwise be high in fat. Add store-bought salsa (no fat added) or make your own. If you can't find chayote, substitute zucchini, which will cook more quickly. The timing: Make the pumpkin bars first. Then steam the chayote squash.
