1 tablespoon olive oil

1 clove garlic -- minced

1 small onion -- chopped

1 medium potato -- sliced

1/4 green bell pepper -- diced

1 small tomato -- chopped

1/4 teaspoon oregano

1 pound soft tofu -- patted dry

1/4 cup flour

1/4 teaspoon turmeric

1 teaspoon nutritional yeast

salt & pepper to taste

 

In a frying pan over med heat, heat the oil or water and saute the garlic,

onion, potato, and green pepper until the potato is cooked, about 10 mins.

 

In the meantime, blend the reamining ingredients in a blender until smooth. Add

the tomato and tofu mixture to the pan and cook, covered, over a very low heat

until the omelette is set, about 10 mins.

 

Serve with salsa.

1 1/2 cake of tofu

2 Tablespoons nutritional yeast -- (2 to 3)

1 Tablespoon tahini

1 teaspoon turmeric

salt

1 Tablespoon safflower oil

 

Mash the tofu well in a bowl with remaining ingredients. Lightly oil skillet

with the 1 Tablespoon of oil. Place batter in well heated skillet and form into

omelette. Flip over when browned and brown on the other side. You can also

simply scramble batter for scrambled tofu. If you want a western omelette add

cooked diced onion and pepper into batter before cooking.

1 brick of firm tofu

1 small clove garlic -- pressed

1 Tbsp minced green onion

1/8 tsp turmeric

salt and pepper to taste

fillings of choice

 

The key to a tofu omelette is to grate the tofu and then very gently mix in the

seasonings (garlic, onions, turmeric, salt and pepper). The long strands of tofu

create a lattice that gives the omelette structural integrity. Once the tofu is

mixed, pour off any water that has collected in the bottom of the bowl and then

arrange the tofu in two omelette-shaped patties on a heated, oiled nonstick or

well-seasoned skillet. Cook the omelettes at a medium heat for 3 to 5 minutes,

until much of the moisture is evaporated and the edges look a bit dry. Fill with

whatever you like, fold and serve.
