Guest guest Posted February 19, 2001 Report Share Posted February 19, 2001 Renee: For baking, I recommend Ener-G Egg Replacer -- you can purchase it or, alternatively, use the recipe I posted over the weekend. You can also substitute 1/4 cup blended silken tofu for each egg in recipes. Somewhere in my MC files I have a " Baking without Eggs " text, and I'll find that and post it for you. For scrambling, the best substitute is tofu. There are packages of seasonings you can buy ( " Tofu Hero " or " Tofu Mate " ) to scramble with or come up with your own. I'll look for some scrambled tofu recipes for you to post. I couldn't find a tofu omelette recipe -- Does anyone have one? Would this work? I'll look into it. Those liquid egg substitute products in regular grocery stores contain egg whites, so they are still eggs. Good for those who are avoiding them for health reasons, I suppose, but not for those who avoid eggs for ethical reasons. I use Egg Beaters-like products for my stepsons all the time. They always complain about " fake stuff " , but got so used to them that when they did have " real eggs " , they said they " tasted funny " and were the " fake kind " and wanted the " real " ones.
