Nori-Sesame Gomasio

A mixture of wild-harvested ground nori (a highly nutritious sea vegetable),

organic sesame seeds and a small amount sea salt. Wonderful on grains,

salads, pasta, veggies. Just sprinkle it on to add flavor and nutrition to

many dishes. Rich in calcium, B vitamins and protein

It is available in health food stores.

ORGANIC GOMASIO is a condiment that is made from 14 parts roasted sesame and

1 part roasted unrefined seasalt. SEAWEED GOMASIO has in addition 3 parts

toasted Karengo.

These condiments are the ideal compliment to grain dishes, providing the

additional essential amino acids to those available from the grain.

Gomasio

A mixture of sesame seeds and salt, much used in Japan. This is a useful way

of reducing salt intake as well as adding savory flavor. I love it sprinkled

over steamed vegetables.

* 3 tablespoons tan or black sesame seeds

* 1 teaspoon sea salt

At a 10 to 1 ratio, put sesame seeds and salt on a small, heavy, dry skillet

over medium-high heat. Cook, stirring constantly for 3 minutes, or until

lightly browned and fragrant, and a seed or 2 start to " pop " . Remove from

heat and grind to a fairly fine powder. Store in an airtight jar.

 

GOMASIO CONDIMENT

* 1 teaspoon sea salt

* 15 teaspoons unhulled sesame seeds

 

Dry roast the sea salt and finely grind in a surabachi (mortar). Wash the

sesame seeds and remove any stones. Then dry roast the seeds until they turn

golden and give off a pleasant smell.

 

Add to salt and gently grind with wooden pestle using circular movements

until about 80% of the seeds are crushed. Store in an airtight jar.

 

Gomasio can be used daily as a condiment sprinkled on all meals. It is an

ideal way to get salt into the body without causing excessive thirst as the

oil from the crushed sesame seeds coats the salt.

 

It also relieves tiredness by neutralizing acidity in the blood and

strengthening the nervous system.

 

 

SEAMAZIO From the Japanese words goma (sesame) and shio(salt), Gomashio is a

very popular macrobiotic condiment. To this we add seven nutritious sea

vegetables to make what we call Seamazio, a delicious source of minerals,

vitamins, enzymes, calcium and protein. [LS]

 

STIR-FRY WITH GOMASIO

RECIPE

Serves 4

Gomasio is a mixture of sesame seeds and salt, toasted and ground to a

powder as a piquant topping for stir-fried vegetables. It can be made at

home and stored in an airtight container for up to a week. As always, you

can vary the vegetables used for the stir-fry, according to your taste and

what is available..

Main Ingredients

You Will Need

 

For the gomasio:

6 tbsps sesame seeds

1.5 tbsps sea salt

 

For the stir-fry:

2 bunches of spring onions

350g (12oz) daikon or turnip

350g (12oz) carrots

350g (12oz) mangetout pea (something like a snow Pea)

2 bunches of radishes

walnut-sized piece of fresh ginger

1 clove garlic

30ml (2 tbsps) groundnut oil (cannot find out anything about this oil, so

just use olive oil)

60ml (4 tbsps) soy sauce

Preparation

1. First make the gomasio. Put the sesame seeds and salt into a dry frying

pan and stir over a high heat until the seeds smell toasted, turn slightly

darker and start to pop: 1-2 minutes. Remove from the heat and leave to

cool, then make into a powder in an electric coffee grinder or a blender.

Put in a small bowl for serving.

 

2. Prepare the vegetables. Trim the spring onions. Cut the daikon or turnip

into matchsticks. Dice the carrots. Trim the mangetout. Slice the radishes.

Grate the ginger and chop the garlic.

 

3. Pour the groundnut oil into a wok or a large frying pan and place over a

high heat.

 

4. When the oil is smoking hot, put in all the vegetables along with the

ginger and garlic and stir-fry until evenly heated through but still crisp:

about 1-2 minutes.

 

5. Add the soy sauce and stir-fry for another minute. Serve at once, with

the gomasio in a small bowl or sprinkled over the stir-fry.

Goma is the Japanese name for sesame. This mixture is used as a condiment

to

sprinkle on rice, raw vegetables and salads. it is good on boiled potatoes,

 

too.

 

Lightly roast the sesame seeds in a dry frying pan over a medium heat for a

 

minute or two, stirring frequently. Allow to cool, then grind them together

 

with the salt. In an airtight jar, the blend will keep for 3-4 months.
