Guest guest Posted February 18, 2001 Report Share Posted February 18, 2001 * Exported from MasterCook * Low-Fat Organic Banana Chocolate Muffins Recipe By : Bea James' Serving Size : 1 Preparation Time :0:00 Categories : Desserts Low-Fat Cooking Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup organic all-purpose flour 1 cup organic whole-wheat pastry flour 3/4 cup organic rolled oats 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/3 cup brown sugar 5 organic egg whites 1/2 cup banana yogurt 2 tablespoons Canola oil 1 teaspoon vanilla 2 teaspoons grated orange peel 1 cup organic bananas -- * see note 3/4 cup organic chocolate chips *This recipe calls for 1 cup organic bananas, mashed but with chunks remaining. Prepare 10 muffin cups with muffin papers. Preheat oven to 350°F. Combine first 7 ingredients in a bowl. In a separate bowl combine remaining ingredients. Lightly fold in the wet ingredients into the dry ingredients. Divide batter between muffin cups.
