Low-Fat Organic Banana Chocolate Muffins

Amount Measure Ingredient -- Preparation Method

1 cup organic all-purpose flour

1 cup organic whole-wheat pastry flour

3/4 cup organic rolled oats

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/3 cup brown sugar

5 organic egg whites

1/2 cup banana yogurt

2 tablespoons Canola oil

1 teaspoon vanilla

2 teaspoons grated orange peel

1 cup organic bananas -- * see note

3/4 cup organic chocolate chips

 

*This recipe calls for 1 cup organic bananas, mashed but with chunks remaining.

 

Prepare 10 muffin cups with muffin papers. Preheat oven to 350°F.

 

Combine first 7 ingredients in a bowl. In a separate bowl combine remaining

ingredients. Lightly fold in the wet ingredients into the dry ingredients.

Divide batter between muffin cups. Bake 25 to 30 minutes or until center of

muffin springs back.
