New-Age Guacamole

Amount Measure Ingredient -- Preparation Method

10 ounces frozen baby lima beans -- thawed

5 ounces lite firm silken tofu (2/3 cup)

2 cloves garlic -- crushed

2 1/2 tablespoons fresh lemon juice

1 teaspoon sea salt

1/2 teaspoon crushed red pepper -- or to taste

1/2 jalapeno chile pepper -- chopped (or to taste)

1/2 teaspoon cumin

1/2 teaspoon freshly ground black pepper

2 scallions -- white part only, chopped

Sesame Pita Chips

 

In a small pot, cook the lima beans according to package directions. Drain and

place in a blender or food processor with the tofu, garlic, lemon juice, salt,

crushed red pepper, jalapeno, cumin and black pepper. Process until smooth.

 

Transfer the " guacamole " to an interesting-looking crock or bowl and stir in the

scallions. Cover tightly and refrigerate for 1 hour.

 

Serve with dip with a basket of Sesame Pita Chips.

NOTES : Since this delicious dip does not depend on fresh ingredients, it is

easily prepared even during the winter months., and it contains little fat. If

you prefer a chunkier, less silky version, omit the tofu and double the amount

of beans.

Sesame Pita Chips

Amount Measure Ingredient -- Preparation Method

2 pita bread rounds

1 tablespoon sesame oil

1 tablespoon dry sherry

2 cloves garlic -- crushed

1 teaspoon cumin

1 teaspoon tamari soy sauce

 

Preheat the oven to 350 F. Cut each pita into 8 pieces, then pull apart each

piece.

 

In a small bowl, combine the oil, sherry, garlic, cumin and soy sauce. Brush

the inner portion of each wedges with the oil mixture and arrange in a single

layer on the baking sheet.

 

Bake the chips until they are crisp and lightly browned (10 to 20 minutes).

Transfer them to a napkin-lined basket and serve warm.
