Raspberry Walnut Dressing

Amount Measure Ingredient -- Preparation Method

1/2 package lite silken tofu - extra firm

1/2 cup lite soymilk

1 tablespoon olive oil

3 tablespoons raspberry vinegar

1 garlic clove -- peeled

2 scallions -- sliced

2 tablespoons dried cherries

2 tablespoons walnut pieces

1 tablespoon liquid Fruitsource -- or to taste

OR substitute sugar

2 tablespoons mellow white miso

1 teaspoon dried parsley

 

In food processor, blend tofu until smooth. Add the next five ingredients and

process. Add the next (last) five ingredients, first pulse, then blend.

Dressing should be smooth with bits of fruit and parsley. Chill at least one

hour.

 

Makes 3 cups.

The secret ingredient in this creamy dressing is dried cherries, which add a

special zing. Try this dressing with a colorful garden salad or over fruit.
