Guest guest Posted February 17, 2001 Report Share Posted February 17, 2001 * Exported from MasterCook * Bea James' House Special Recipe By : Bea James' Serving Size : 4 Preparation Time :0:20 Categories : Grains Miso & Tofu Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 2/3 cups water 1 1/2 cups quinoa 3 cups broccoli florets -- * see note 1 pound firm tofu -- cut in 4 " pieces 4 teaspoons olive oil 2 teaspoons Tamari soy sauce 4 garlic cloves -- minced 2 medium scallions -- diced 1 teaspoon dried sage *This recipe calls for 3 cups broccoli florets, steamed until slightly tender. Boil 2-2/3 cups water, add quinoa, and return to a boil. Immediately reduce heat to low. Cover and cook for 15 to 20 minutes. While quinoa cooks, steam broccoli. Sauté tofu in tamari, olive oil and seasonings (garlic, scallions and sage).
