Bea James' House Special

Amount Measure Ingredient -- Preparation Method

2 2/3 cups water

1 1/2 cups quinoa

3 cups broccoli florets -- * see note

1 pound firm tofu -- cut in 4 " pieces

4 teaspoons olive oil

2 teaspoons Tamari soy sauce

4 garlic cloves -- minced

2 medium scallions -- diced

1 teaspoon dried sage

 

*This recipe calls for 3 cups broccoli florets, steamed until slightly tender.

 

Boil 2-2/3 cups water, add quinoa, and return to a boil. Immediately reduce

heat to low. Cover and cook for 15 to 20 minutes.

 

While quinoa cooks, steam broccoli.

 

Sauté tofu in tamari, olive oil and seasonings (garlic, scallions and sage).

 

Top quinoa with steamed broccoli and sautéed tofu.
