Sesame Vinaigrette with Chili Oil

1 clove garlic -- minced

1 teaspoon minced ginger

1 shallot -- finely diced

3 tablespoons rice wine vinegar

1 teaspoon soy sauce

1 teaspoon light brown sugar

3 1/2 tablespoons sesame oil

1 tablespoon dark sesame oil

1/2 teaspoon chili oil

1 tablespoon chopped cilantro -- (optional)

 

Combine the garlic, ginger, and shallot in a small bowl, cover with the vinegar,

and let stand for 15 minutes. Stir in the soy sauce and sugar, then whisk in

the oils. Add the cilantro. Taste and adjust the amount of soy and sugar if

needed.
