Guest guest Posted February 16, 2001 Report Share Posted February 16, 2001 * Exported from MasterCook * Mission Figs With Walnuts And Manchego Cheese Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 168 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Salads, Fruit Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 shallot -- finely diced 2 teaspoons balsamic vinegar 1 teaspoon red wine vinegar Salt and freshly milled pepper 2 handfuls red lettuce trimmed and torn into pieces small leaves left whole 1 handful arugula -- stems removed 3 tablespoons extra virgin olive OR walnut oil 12 ripe figs 8 walnuts in large pieces Manchego or dry Jack cheese -- thin shavings Serves 4 Any variety of fig is fine as long as it's ripe and sweet, but the dense flavor of black Missions is just right with the vinegar and the slightly salty cheese. Combine the shallot, vinegars, and 1/8 teaspoon salt in a bowl. Let stand while you prepare the greens, then whisk in the oil. Peel the figs only if the skins are very thick; otherwise, just wipe them with a damp cloth to remove any dust. Slice the figs into rounds. Toss the lettuce and arugula with ha If the dressing and arrange on four salad plates. Add the figs and walnuts and season with pepper.
