Guest guest Posted February 16, 2001 Report Share Posted February 16, 2001 * Exported from MasterCook * Melon And Cucumbers With Pepper And Lime Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 167 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Salads, Fruit Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 honeydew or cantaloupe OR other melon -- chilled 3 cucumbers 2 cups watercress or arugula leaves Lime and Fresh Mint Vinaigrette (see separate recipe) OR juice of 2 limes Salt and freshly milled pepper Serves 4 Cucumbers and melons are closely related not only botanically but also in texture and sometimes flavor, depending on the variety. Freshly milled pepper is good with both. Scoop out the seeds, then slice the melon into narrow wedges and remove the skin. Scrub the cucumbers or peel if the skin is thick; cut into sixths. Make a bed of greens on our plates and arrange the melon and cucumbers on top.
