Guest guest Posted February 15, 2001 Report Share Posted February 15, 2001 * Exported from MasterCook * Farmers' Market Salad Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 163 Serving Size : 1 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 carrot -- scrubbed and finely diced 1 cucumber -- peeled if waxed seeded and diced 2 tomatoes -- chopped 1 celery rib -- finely diced 4 large green olives -- pitted small cheese cubes such as a goat Cheddar or ricotta salata 1 tablespoon toasted sunflower seeds OR pine nuts Torn leaves of basil or marjoram or lovage OR whatever herb is available 1 teaspoon olive oil -- or to taste OR sunflower seed oil Salt and freshly milled pepper Fresh lemon juice -- to taste OR red wine vinegar Serves 1 This is a dish I look forward to eating day after day throughout the summer when vegetables are at their peak. I use whatever the farmers' market is offering. Here's an example. Gently toss everything with the oil.
