Guest guest Posted February 14, 2001 Report Share Posted February 14, 2001 * Exported from MasterCook * Cracked Wheat Pilaf With Chestnuts And Fennel Recipe By :New Flavours for Vegetables and Salads: Special Occasions Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 red onions -- peeled with root end intact 4 small fennel bulbs -- trimmed with root end intact 6 tablespoons olive oil salt and pepper 9 ounces cracked wheat (bulgar wheat) 1 1/4 pints well-flavored vegetable stock 7 ounces cooked peeled chestnuts 3 tablespoons chopped flat-leaf parsley Preheat oven to 400F. Cut each onion and fennel bulb lengthways into 6-8 pieces. Place on a baking tray and drizzle with half of the oil. Season with salt and pepper and turn well to coat the vegetables with the oil. Rinse the cracked wheat and drain well. Heat 2 tbsp oil in a heavy based flameproof casserole. Add the cracked wheat and stir to coat with the oil. Pour in the stock and bring to the boil. Lower the heat, cover and simmer gently for 15-20 minutes. Meanwhile, roast the vegetables in the oven for 20 minutes. When the cracked wheat is ready, turn off the heat, remove the lid and cover with a clean tea towel or muslin. Add the chestnuts to the vegetables, turn to coat with oil and return to the oven for a further 5 minutes. Fold the vegetables into the cracked wheat with the remaining 1 tbsp oil and the chopped parsley to serve.
