I was toodling around and found a summary written by Noel V. " I don't know. I don't buy Ener-G Egg. It's not in the mc ingredient-list. And now for the recipe. * Exported from MasterCook * Tofu Cornbread Recipe By :Vibrant Life Online Serving Size : 9 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cup yellow cornmeal 3/4 cup whole-wheat pastry flour 2 teaspoon baking powder 2 teaspoon sugar 1/2 teaspoon salt 3/4 cup calcium-fortified soy milk or skim milk 1 cup tofu -- crumbled 1 1/2 teaspoon Ener-G Egg Replacer or 1 egg 1/4 cup oil Stir together cornmeal, flour, baking powder, sugar, and salt in mixing bowl. Guest guest Posted February 14, 2001 Report Share Posted February 14, 2001 I'm at work and don't have my package handy but, as I recall, Ener-G Egg Replacer contains potato flour, etc. As far as it being high in calories with no nutritional value -- you only have to use about a teaspoon per each egg replaced, so I don't see how, overall, it can contribute to calories very significantly. I'll check the nutritional info on the package and post it along with the ingredients later.
