Guest guest Posted February 13, 2001 Report Share Posted February 13, 2001 * Exported from MasterCook * Quinoa Salad With Mangoes And Curry Dressing Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 172 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Grains And Cereals Salads, Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Salt 1 1/3 cups quinoa -- rinsed thoroughly 2 large mangoes 1 jalapeño chile -- seeded and diced 3 scallions -- thinly sliced including an inch of the greens Curry Vinaigrette (see separate recipe) 1/3 cup almonds -- roasted Serves 4 Bring 3 cups water to a boil in a saucepan, then add 1/2 teaspoon salt and the quinoa. Lower the heat, cover, and simmer until the quinoa is tender, 12 to 15 minutes. Drain. Cut the mangoes: Stand each one upright and slice down either side of the seed, which you can't see but which runs lengthwise through the center of the fruit. Score the two pieces, then bend the skin. Cut off the squares of mango where they attach to the skin. Toss the quinoa with the mangoes, chile, scallions, and vinaigrette.
