Spray the grill rack with cooking oil. Peel the sweet potatoes and cut them lengthwise into slices about 1/8-inch thick. In a small bowl, stir together the molasses, oil, lemon juice, lemon peel, salt and pepper. Brush the mixture onto both side of the potato slices.
