Balsamic or Fruit Vinegar Vinaigrette

4 teaspoons balsamic, raspberry, or other fruit

vinegar

2 teaspoons red wine vinegar

1 shallot -- finely diced

salt & freshly milled pepper

5 tablespoons extra virgin olive oil

 

Combine both vinegars and the shallot with a few pinches of salt and a little

pepper in a small bowl. Let stand for 15 minutes. Whisk in the olive oil.

Taste to make sure the balance is right.
