Maple-Roasted Squash

1 medium delicata squash (3/4 lb)

1 tablespoon canola oil

1 tablespoon pure maple syrup

pinch sea salt

 

Preheat the oven to 375F. Cut the squash in half lengthwise and use a teaspoon

to remove the seeds. Cut the squash into triangular wedges, place iin a bowl

and toss with the oil. syrup, and salt. Spread on a parchment-lined baking

sheet and roast until the squash is tender and lightly caramelized.

 

Description:

" In this recipe, a small amount of maple syrup and a high roasting

temperature intensify the squash's sweetness - I think of this as

vegetable candy. I am fond of delicata squash, but you can use

kabocha, red kuri, or any other with an edible skin. "

What is delicata squash - I've never heard of it? And the word, delicata,

doesn't appear in any of my dictionaries. But if the skin is edible, i'd

like to meet it :)

The skin is edible, but usually not eaten. the description comes from the

cookbook author. Delicata is a winter squash and is on the sweet side.
