Couscous Or Quinoa With Pine Nuts And Dried Fruits

Amount Measure Ingredient -- Preparation Method

1 1/3 cups raw couscous or quinoa

OR 3 cups cooked

***LIME-CUMIN VINAIGRETTE***

(see separate recipe)

1 yellow bell pepper -- very finely diced

6 dried apricots -- finely chopped

3 tablespoons golden raisins

2 tablespoons currants

1/4 cup pine nuts

toasted in a small skillet

2 tablespoons chopped cilantro

OR chives

Salt

Perfect whole lettuce or radicchio leaves

 

SERVES 4

 

This sweet and tangy salad punctuated with succulent bits of pepper and

dried fruits is wonderful made with steamed couscous and also fine made

with leftovers.

 

Cook the couscous or quinoa (see separate recipes for Steamed Couscous and

Quinoa). Toss the cooked grain with 1/4 cup of the dressing or more to

taste, add the remaining ingredients except salt and lettuce, and toss

again. Taste and season with salt. Serve it cradled in nicely formed

lettuce leaves.
