Maple-Glazed Squash

1 pound squash -- seeded and cut into 1-inch pieces (3 cups)

1/4 cup pure maple syrup

salt

 

Serves 4 to 6

 

In a medium skillet, put squash in 1/2-inch water. Cook, covered for 5 to 10

minutes, or until the squash is barely tender. Check after 5 minutes so as not

to overcook.

 

Uncover, add the maple syrup to the pan, and turn the heat up to high. Boil for

a few minutes, until the syrup has reduced and thickened. Sprinkle with salt.

natural sweetness. Use delicata, red kuri, kabocha, or any other

squash with edible skin "
