Macadamia Nut And Mixed Rice Salad

1/2 cup unsalted or salted macadamia nuts -- up to 1 cup

1 cup wehani rice

1/2 cup wild rice

1/2 cup long-grain white rice

1/2 cup brown basmati rice

2 green bell peppers -- finely diced

***THE VINAIGRETTE***

1 bunch scallions

including some of the greens -- thinly sliced

1 garlic clove -- minced

1 tablespoon minced ginger -- (heaping tablespoon)

1 jalapeño chile -- seeded

and finely chopped

1 orange -- grated zest & juice

2 tablespoons rice wine vinegar

2 tablespoons rice wine -- (mirin)

1 teaspoon garam masala

2 drops orange oil

OR 2 teaspoons orange flower water

Salt and freshly milled pepper

1/2 finely chopped parsley

 

SERVES 10

The perfume of orange, either from the orange oil (you can find it in

specialty stores) or the more floral orange flower water, along with the

ginger and the warm spices in garam masala bring the unique flavor of

macadamia nuts forward.

 

Preheat the oven to 350F. Roast the nuts on sheet pan until golden, about

10 minutes. Keep an eye on them; they can brown suddenly. Finely chop

half of the nuts and keep the rest in large pieces.

 

Cook each type of rice separately in salted water, then drain. Combine the

ingredients to make the vinaigrette. You may need to fiddle with the

seasonings, adding more of this or that to get the balance just right. It

should be full of flavor but soft and balanced, not sharp. Combine the

cooked rices in a large bowl with the diced peppers. Pour the vinaigrette

over the rice and toss with the finely chopped nuts. Just before serving,

toss again with the remaining nuts so that they'll be nice and crisp.
