Horseradish " Cream "

1/2 pound soft tofu

2 tablespoons fresh lemon juice

3 tablespoons canola oil

2 tablespoons brown rice vinegar

3/4 teaspoon sea salt

1/4 teaspoon white pepper

1/2 cup minced red onion

1 tablespoon chopped fresh dill

2 teaspoons prepared horseradish

 

In a food processor fitted with a metal blade, combine the tofu, lemon juice,

oil, vinegar, salt, and pepper and process until smooth. Transfer to a bowl and

stir in the remaining ingredients.

 

Description:

" As innocent-looking as it seems, this " cream " has so much zestiness

you might want to double the recipe for extra slathering. You can

always use the extra for a touch of high-protein pizzazz on vegetables

and grains. "
